The Board of Health convened for a special session to address a food establishment permit for the Food Truck, which will operate as a mobile food establishment in the parking lot of the Menemsha Blues store at Basin Road, using Offshore Ale in Oak Bluffs as its fixed commercial kitchen establishment.
The Board discussed how the Food Truck operation would handle food prep in a pre-existing and year-round establishment, how drinking water and wastewater in the truck would be maintained according to protocols developed for the Food Truck when it was operating out of the Homeport kitchen, how the truck would be routinely sanitized , and whether the truck could operate with a power source other than its portable generator at the service location.
Josh Aronie reported that food for the truck is stored in a clearly demarcated location in the Offshore Ale kitchen, and takes place at hours when the establishment is not using its kitchen. Transport of food is via the refrigerated van, and most food (other than soup) is transported cold and cooked to order in the truck. There will be an available power outlet at the site, and the truck will be moved to the Offshore Ale/Edgartown Wastewater Treatment plant for water exchange.
The Board approved the food establishment application for the Food Truck, pending a successful pre-opening inspection.
